Binnen 30 minuten zet je deze kip in Italiaanse tomatensaus en mozzarella op tafel. In Italië staat een pan tomatensaus de hele dag te pruttelen maar daar hebben wij helemaal geen tijd voor. Ik laat je zien dat de “snelle” manier ook een heerlijk resultaat oplevert waar jong en oud van zal smullen.
Geef er een portie pasta en groenten bij, zoals broccoli. Je kunt ook in stukjes gesneden courgettes meebakken met de ui voor je de tomatensaus toevoegt.

Ingredients
- 1 ui, gesnipperd
- 1 teen knoflook, fijngehakt
- 1 rode paprika, in stukjes
- Chiliflakes (optioneel)
- 1 fles van 690 ml. passata di pommodori, zonder kruiden
- 3 biologische kipfilets
- Gedroogde rozemarijn
- Gedroogde tijm
- Gedroogde oregano
- 1 bol mozzarella
- Hand Parmezaanse kaas, geraspt
- Verse basilicum
- Peper en zout
- Olijfolie
Instructions

Fruit de ui in wat olijfolie glazig, bak de knoflook en chiliflakes even mee. Voeg de paprikastukjes toe en bak 5 minuten tot de paprika zacht is.

Verwarm de oven voor op 200 graden.

Schenk er de passata bij, voeg rozemarijn, tijm en oregano naar smaak toe. Ongeveer 1,5 theel. van elk. Ook wat peper en zout toevoegen. Houd je van pittig, vergeet dan de chilipeper niet!

Laat de saus inkoken terwijl je de kip bakt.

Snijd de kipfilets elk in 2 of 3 stukken, bestrooi met rozemarijn, peper en zout. Bak ze op hoog vuur goudbruin in olijfolie, afhankelijk van de dikte 3-5 minuten per kant.

Verdeel de kip en tomatensaus in een passende ovenschaal, leg op ieder stuk kip een plakje mozzarella en bestrooi het geheel met Parmezaan. Bak het in de oven tot de mozzarella bubbelt en een beetje kleurt. Dit duurt ongeveer 10 minuten.

Bestrooi met verse basilicum en serveer direct.
Notes
Geef er pasta en groenten bij.
