How to Make a 7 Up Bundt Cake

Prepare the cake batter: Whisk the flour, baking powder and salt together in a mixing bowl. Cream the butter and sugar in another bowl, using a stand mixer or electric mixer, and add the eggs, one at a time, beating well. Add the flour mixture to the butter mixture, and add the lemon and lime zest, and the 7Up, mixing gently.
Bake the 7 Up pound cake: Spread the batter evenly in a prepared Bundt pan and bake for about 80 minutes or until done. Let the cake cool completely on a wire rack.
Add the glaze: Whisk the powdered sugar with 7 Up and lemon zest, adding more powdered sugar or 7 Up to get the consistency right. Drizzle the glaze over the cooled cake, slice and serve.

Ingredients
For the Cake:
- 3 Cups all purpose flour, spooned and leveled
- 1 Teaspoon baking powder
- ¼ Teaspoon salt
- 1½ Cups salted butter, at room temperature
- 2 Cups granulated white sugar
- 5 eggs, at room temperature
- 1 Cup 7 Up soda, at room temperature
- 1 Tablespoon lemon zest
- 1 Teaspoon lime zest
For the Glaze:
- 1 Cup powdered sugar
- 2 or 3 Tablespoons 7 Up soda
- 1 Teaspoon lemon zest
- ½ Teaspoon lime zest
Instructions
Preheat your oven to 325°F.
Grease and flour a Bundt pan.
Make the Cake Batter:
In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
In a large mixing bowl, cream the butter and sugar together until very light and fluffy, making sure to scrape down the sides of the bowl halfway through, 10 to 15 minutes.
Add the eggs one at a time, beating well after each addition until fully incorporated.
Gradually add the flour mixture to the butter mixture, mixing just until combined.
Add the lemon zest, and lime zest and slowly pour in the 7-Up soda. Gently mix until the soda is incorporated.
Pour the batter into the prepared Bundt pan, spreading it evenly.
Bake the Cake:
Bake for 75 to 85 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Make the Glaze:
Once the cake is cooled, make the glaze by whisking together the powdered sugar, 7-Up and lemon zest.
Add more powdered sugar or 7 up until you get to a thick pourable consistency.
Drizzle glaze over cake and serve.
